Beef Burgundy

Combine and bake in a covered casserole at 275 degrees for 3 1/2 hours
- 2 # beef, cubed
- 1 c Burgundy
- 1/8 c onion soup mix
- 1 can cream of mushroom soup
- 1/2# fresh mushrooms, sliced
Sausage Burritos

Cook sausage, breaking into crumbles
- 1 can refried beans
- 1 # pork sausage (unseasoned)
- 1 medium tomato, coarsely chopped
- 1 T chili powder
- 1 T vinegar
- 1 clove garlic, minced
- 1/2 t salt
- 1/4 t cinnamon
- 8 - 10" flour tortillas
- 1 c shredded Monterey Jack
Scotch Eggs

Serve hot or cold so they make great additions to lunch bags or even picnic fare
- 5 eggs, 4 hard boiled; 1 raw, beaten
- 1 # pork sausage
- 2 oz bread crumbs
- oil for deep frying
- flour with 1/2 t ea. salt and pepper combined
Soy-Garlic Marinade for Pork, Chicken and Beef

Mix ingredients. marinate chosen meat for 1 hour or over night
- 1/4 c salad oil
- 1/4 c soy sauce
- 2 T ketchup
- 1 T vinegar
- 1/4 t pepper
- 2 cloves, garlic, minced
Basic Waffle Batter

Combine dry ingredients. In a separate bowl, mix yolks, oil and milk
- 1 3/4 flour
- 2 t baking powder
- 1/2 t salt
- 1 T sugar
- 3 egg yolks, beaten
- 1/4 c oil
- 1 1/2 c milk (if soured, add 1 t of baking soda)
- chocolate syrup (optional)
- 3 egg whites, whipped until peaks are formed
Creamy Italian Dressing

In a blender or food processor, combine mayonnaise, onion, vinegar, and sugar
- 1 cup light mayonnaise
- 1/2 small onion
- 2 tablespoons red wine vinegar
- 1 tablespoon white sugar
- 3/4 teaspoon Italian seasoning
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper

- 24 slices French bread, sliced 1/4" thick
