Fluffy Flapjacks

Great use for sour milk; gives the pancakes another dimension of fluffiness
- 1 1/2 c milk or sour milk
- 4 T vinegar (skip if using milk that's already sour)
- 2 eggs
- 4 T melted butter
- 2 c flour
- 4 T sugar
- 2 t baking powder
- 1 t baking soda
- 1 t salt
Caramel French Toast Casserole

- 12 slices or 8 cups bread, cubed
- Caramel Sauce:
- 2 T corn syrup
- 1 stick butter
- 1 c brown sugar
- Egg mixture:
- 6 eggs
- 1 1/2 c milk
- 1 t vanilla
- 1/4 t salt
Hash Brown Special

Saute onion and carrot in butter and oil until crisp-tender
- 3 medium potatoes, peeled, cubed
- 1/2 lg onion, chopped
- 1 carrot, shredded
- 1 T butter
- 1 T oil
- 1/2 t salt

- 1 cup butter, softened
- 1/2 cup white sugar
- 2 cups all-purpose flour

Favorite Pumpkin Pie

Line pie plate with crust
- Single pie crust, unbaked
- 2 c cooked or canned pumpkin
- 2/3 c brown sugar
- 2 t cinnamon
- 1/2 t each: ginger, nutmeg, cloves, salt
- 3/4 c milk
- 2 eggs, well beaten
- 1 c heavy cream or canned evaporated milk
- 1/4 c brandy
Crock pot Banana Bread

- 1/2 c butter, margarine or 1/3 c oil
- 1 c sugar or 1/2 c honey
- 2 eggs, beaten
- 4 small, very ripe bananas, mashed
- 3 T water or milk
- 2 c flour

Tilapia with Taco Seasoning

Heat GRILL pan over medium-high heat 5 minutes
- Salsa
- 1/2 medium pineapple or 20 oz can pineapple slices
- 1/4 small red onion
- 2 T fresh cilantro, chopped
- 1/8 t salt
- 1/2 lime, juiced
- Tilapia
- 1/2 of a 1.25 oz pkt taco seaoning mix
- 3 T olive oil with 1 t crushed garlic
- 4 boneless, skinless tilapia filets
Seasoned Swai Fillets

Preheat oven to 350 degrees F (175 degrees C)
- cooking spray
- 4 (4 ounce) fillets swai fish
- 2 tablespoons butter
- 1/4 cup dry white wine
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh cilantro (optional)
- 1 teaspoon minced garlic
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon paprika
Cajun Pasta

Bring pot of water to boiling for pasta
- 1# fettuccine
- 1 boneless, skinless breast half, cut crosswise
- 2.5 tsp Essence
- 2 tsp olive oil
- 4 oz chorizo
- 1# shrimp
- 2 t garlic, minced
- 1.5 c heavy cream, half & half, or milk
- 2/3c grated Parmesan
- 1/4 t Worcestershire sauce
- Essence:
- 5 T sweet paprika
- 1/4 c salt
- 1/4 c garlic powder
- 2 T ea:
- black pepper
- onion powder
- cayenne pepper
- dried oregano
- dried thyme
