Chicken Breast in Wine

Cut chicken breasts in half
- 15 whole chicken breasts. boned and skinned
- 1 3/4 cups butter
- 1/2 cup cognac
- 2 1/2 small fresh mushrooms
- 5 lbs small white onions
- 1 1/2 teaspoons salt
- 3/4 teaspoon pepper
- 2 bay leaves
- 1/8 teaspoon dried thyme leaves
- 2 1/3 cups sauterne
- 3 cans (12 1/2 size) chicken broth
- 1/2 cup cornstarch
- 2 1/2 cups heavy cream
Swedish Meatballs

Preheat oven to 350
- 3/4 lbs ground chuck
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon Worcestershire sauce
- 1/4 teaspoon dried thyme leaves
- 1/3 cup butter
- 1 1/2 teaspoons flour
- 1/2 cup heavy cream
- 1 beef bouilon cube
- 1/4 teaspoon meat-extract paste
- 1/4 teaspoon bottled gravy seasoning
- 1 tablespoon chopped fresh dill
Egg-Drop Soup

Heat broth to boiling point in large saucepan
- 4 cans clear chicken broth
- 3 tablespoons cornstarch
- 1/2 teaspoon sugar
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 eggs, beaten
- 1 cup chopped green onions
Fried Rice

- 1/4 cup salad oil
- 2 cups cold cooked white rice
- 3 eggs beaten
- 2 cooked bacon slices
- 2 tablespoons soy sauce
- 1/2 teaspoon pepper
- 3 green onions
Spinach Souffle

Thaw spinach in a colander, squeeze to get moisture out
- 1 (16oz) bag frozen chopped spinach
- 1/4 cup butter
- 1/4 cup flour
- 1/2 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1 cup milk
- 2 tablespoon very finely chopped onion
- 1/2 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 3 large eggs, seperated
- 1/4 teaspoon cream of tartar
Chocolate Souffles

Butter six 1-cup ramekins (4 by 2 inches) and coat with sugar, knocking out excess sugar
- 1/4 cup sugar plus additional for coating ramekins
- 8 ounces fine-quality bittersweet chocolate (not unsweetened)
- 3/4 stick (6 tablespoons) unsalted butter
- 2 tablespoons heavy cream
- 4 large egg yolks
- 7 large egg whites
- 1/4 teaspoon cream of tartar
Coles Slaw

Combine cabbage and carrots
- 1 head green cabbage, finely shredded
- 2 large carrots, finely shredded
- 3/4 cup best-quality mayonnaise
- 2 tablespoons sour cream
- 2 tablespoons grated Spanish onion
- 2 tablespoons sugar, or to taste
- 2 tablespoons white vinegar
- 1 tablespoon dry mustard
- 2 teaspoons celery salt
- Salt and freshly ground pepper
Basmati Rice

Combine the rice, 1 3/4 cups water, the salt, and butter in a small heavy-bottomed saucepan
- 1 cup uncooked long-grain (white) basmati rice (recommended: Texmati)
- 1 3/4 cups water
- 3/4 teaspoon kosher salt
- 1 tablespoon unsalted butter
- 2 tablespoons minced fresh curly parsley leaves
- 1 tablespoon minced fresh dill leaves
- 1 tablespoon minced fresh scallions, white and green parts
- Pinch freshly ground black pepper
The Very Best Peanut Butter Cookies

- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1/2 cup butter, room temperature
- 1/2 cup peanut butter
- 1 egg
- 1 1/4 cup flour

- 1/2 teaspoon baking powder

- 2 cups chilled heavy cream
- 4 large egg yolks
- 3 tablespoons sugar
- 1 teaspoon vanilla
- 7 oz fine-quality bittersweet chocolate (not unsweetened), chopped
- Garnish: lightly sweetened whipped cream
