Passover Brownies

Beat eggs and sugar. Add oil
- 5 eggs
- 2 1/2 cups white sugar
- 1 1/4 cups vegetable oil
- 1 1/4 cups matzo cake meal
- 1 1/2 cups unsweetened cocoa powder
- 1 1/4 cups chopped walnuts
Baked Zucchini and Tomatoes

Trim ends from zucchini and remove stem and tough core from the tomatoes
- 3 medium zucchini
- 2 medium tomatoes
- 1 medium green bell pepper, seeded and chopped
- 1/2 cup finely chopped onion
- 1/2 teaspoon salt, or to taste
- 1/8 teaspoon freshly ground black pepper
- 1/2 teaspoon dried leaf basil
- 1/4 cup good olive oil
Pasta with Roasted Vegetables, Tomatoes and Basil

Preheat oven to 450°F. Spray large roasting pan with nonstick spray
- Nonstick vegetable oil spray
- 2 red bell peppers, cut into 1/2-inch pieces
- 1 medium eggplant, unpeeled, cut into 1/2-inch pieces
- 1 large yellow crookneck squash, cut into 1/2-inch pieces
- 1 1/2 cups 1/2-inch pieces peeled butternut squash
- 4 tablespoons olive oil
- 1 pound penne pasta
- 2 medium tomatoes, cored, seeded, diced
- 1/2 cup chopped fresh basil or 1 1/2 teaspoons dried
- 2 tablespoons balsamic vinegar
- 1 garlic clove, minced
- 1/2 cup grated Parmesan cheese
Chili Meatballs

- 2 egg yolks
- 1/2 cup packaged dry bread crumbs
- 1 cup grated Cheddar cheese
- 1 1/2 teaspoons chili powder

- 1 cup sugar
- Topping:
- 2 cups dairy sour cream
- 1 tablespoon sugar

Corned Beef and Cabbage

Wipe Corned beef with damp paper towels
- 4 to 5 lb corned beef brisket
- 1 medium clove garlic
- 1 medium onion halved
- 2 whole cloves
- 1/4 teaspoon pepper
- 2 bay leaves
- 1/4 teaspoon mustard seed
- 1 medium head cabbage, cut into wedges
Chicken Sun Dried Broccoli Raab

Heat the oil from sun-dried tomatoes in a large skillet over medium-high heat
- 1 cup diced oil-packed sun-dried tomatoes, plus 1 tablespoon oil from jar
- 1 pound boneless skinless chicken breast halves, cut into 2-inch pieces
- 1 bunch broccoli rabe, chopped
- 3-4 cloves of garlic
- 1/2 cup sliced pitted black olives
- 1/4 cup chicken bouillon
- Salt
- Freshly ground black pepper
- 1/3 cup crumbled feta cheese
Savory Roast Beef

Preheat oven to 325F. Place beef, fat side up, in shallow, open roasting pan
- 3 rib roast beef, bone in
- 14 teaspoon dried majoram leaves
- 14 teaspoons dried thyme leaves
- 14 teaspoons rubbed savory
- 14 teaspoon dried basil leaves
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 teaspoon meat-extract paste
- 1 1/2 cups Burgundy
- 6 tablespoons flour
Deviled Eggs Divan

Make Deviled Eggs as above, using half of recipe
- 6 Hard-cooked eggs
- 2 pkgs frozen asparagus spears
- 1/4 cup butter or margarine
- 1/4 cup finely chopped onion
- 2 tablepoons flour
- 1/4 teaspoon dry mustard
- 1/2 teaspoon salt
- Dash of pepper
- 1 1/2 cups milk
- 1/2 cup grated parmesan cheese
