Irish Soda Bread

Preheat the oven to 375 degrees F
- 4 cups all-purpose flour, plus extra for currants
- 4 tablespoons sugar
- 1 teaspoon baking soda
- 1 1/2 teaspoons kosher salt
- 4 tablespoons (1/2 stick) cold unsalted butter, cut into 1/2-inch dice
- 1 3/4 cups cold buttermilk, shaken
- 1 extra-large egg, lightly beaten
- 1 teaspoon grated orange zest
- 1 cup dried currants
Almond Joy Ice Cream

Whip heavy whipping cream until peaks form
- 2 cups heavy whipping cream
- 3/4 cup International Delight Almond Joy creamer
- 1 can sweetened condensed milk
- 3/4 cup hot fudge topping (I used Hershey's)
- 1/2 cup sliced almonds
- coconut flakes, sliced almonds, hot fudge topping (optional)

- 2 1/2 lb medium eggplants (about 3), cut crosswise into 1/3-inch-thick rounds
- 3 1/4 teaspoons salt
- 5 lb plum tomatoes
- 1 1/2 cups plus 3 tablespoons olive oil
- 2 large garlic cloves, finely chopped
- 20 fresh basil leaves, torn in half
- 3/4 teaspoon black pepper
- 1/4 teaspoon dried hot red pepper flakes
- 1 cup all-purpose flour
- 5 large eggs
- 3 1/2 cups panko * (Japanese bread crumbs)
- 2 ozfinely grated Parmigiano-Reggiano (2/3 cup)
- 1 lb chilled fresh mozzarella (not unsalted), thinly sliced

- 6 eggs, beaten
- 1 -ounce Parmesan, grated
- 1/2 teaspoon black pepper
- Pinch salt
- 1 teaspoon butter
- 1/2 cup chopped roasted asparagus
- 1/2 cup chopped country ham
- 1 tablespoon chopped parsley leaves
Spinach Stuffed Chicken

Make a pocket of the skin by separating it, on one corner to bottom of breast
- 4 chicken breasts, skin on, rinsed and dried
- 2 boxes frozen spinach, steamed and cooled
- 8 oz. pkg. cream cheese
- 1/4 c. Parmesan cheese
- 1/2 tsp. garlic powder (or to taste)
- 2 tbsp. olive oil
- 2 tbsp. rosemary

- 3 or 4 ripe bananas, smashed
- 1/3 cup melted butter
- 1 cup sugar (can easily reduce to 3/4 cup)
- 1 egg, beaten
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups of all-purpose flour
- 1/4 cup of walnuts
- 1/4 cup of Brown Sugar
- 1 1/2 teaspoons of vanilla extract
Tilapia Tacos

Heat oil in a skillet and sauté onions until translucent
- 1 lb tilapia fillets, rinsed and pat dried
- 1 tsp olive oil
- 1 small onion, chopped
- 4 garlic cloves, finely minced
- 2 jalapeño peppers, chopped (seeds removed for less heat)
- 2 cups diced tomatoes
- 1/4 cup fresh cilantro, chopped
- 3 tbsp lime juice
- salt and pepper to taste
- 8 5-inch white corn tortillas (I used La Tortilla Factory Fiber & Flax)
- 1 medium haas avocado, sliced
- lime wedges and cilantro for garnish
Thai Fish Curry

Finely grate enough peel from 2 limes to measure 1 1/2 teaspoons
- 3 large limes
- 1 tablespoon vegetable oil
- 1 cup chopped shallots
- 1 large red bell pepper, cut into 1/2-to 3/4-inch dice
- 1 1/2 tablespoons minced peeled fresh ginger
- 2 1/2 teaspoons Thai red curry paste (such as Thai Kitchen brand)
- 1 13 1/2- to 14-ounce can unsweetened coconut milk
- 1 tablespoon fish sauce (such as nam pla or nuoc nam)
- 16 to 18 ounces tilapia, cut into 1 1/2-inch chunks
- 8 peeled deveined uncooked large shrimp (8 to 10 ounces)
- 1/3 cup chopped fresh cilantro
- 1/3 cup chopped fresh basil
