Leek Lasagna

  • 10 oz cooked lasagna
  • 1 1/2 lbs of leeks
  • 10 oz Maroilles cheese
  • 4 eggs
  • 3-4 tbsp salted butter
  • generous 3/4 cup cream
  • Salt and pepper

Step 1

Preheat oven to 400 °.

Cut the leeks into sticks and cook 15 minutes in boiling salted water. Drain and set aside.

Step 2

In a bowl beat the egg yolks, add the softened butter, cream and the whites beaten stiff.

Step 3

Butter a baking dish and pour a little of the mixture. Arrange a layer of lasagna. Top with leek sticks and sprinkle with slices of Maroilles.

Step 4

Repeat until all the ingredients are used. Finish with a layer of egg/butter mixture. Salt and pepper.

Bake 45 minutes.
