Ultimate White Chicken Chili


Creamy, white chili with chicken and northern beans. A little sweet, a little spicy, all delicious!

  • 1 fully cooked rotisserie chicken, shredded
  • 1 1/2 Med. onion, diced
  • 3t garlic powder
  • 2 T. olive oil
  • 2 cans great northern beans
  • 1 can cannelini beans
  • 2 C. water
  • 2 C. milk
  • 5 chicken bouillon cubes
  • 2 t. salt
  • 2 t. pepper
  • 1 t. cayenne pepper
  • 2 1/2 C. sour cream
  • 2 (9 oz.) cans green chilies
  • 1 1/2 C. monteray jack cheese

Step 1

Add beans, chilies, seasonings, water, bouillon, chicken, and onion. Bring to a boil

Step 2

Reduce heat and simmer uncovered for 30 minutes.

Step 3

Remove from heat and stir in sour cream and cheese.

Step 4

Serve immediately.


May garnish with extra cheese and green onions.

Serve with fresh, homemade bread.
