Apple and Chicken Wrap
Fresh, crisp apples and roasted chicken with vegetables and a touch of oriental dressing in a light, delicious wrap.
- 1 pound chicken breast meat, cut into strips
- 1 tablespoon olive oil -for cooking chicken
- 8 oz fresh apples-sliced
- 2 avocados, sliced
- 1 cup walnuts
- 2 cups chopped lettuce
- 1/4 cup oriental dressing ( plus a little extra for drizzling)
- 6 oz softened cream cheese
- 6 flour tortillas

Mix together the oriental dressing and cream cheese in a bowl until smooth.
Heat the olive oil in a skillet on medium-high heat, and cook and stir the chicken breast strips until they are beginning to turn golden and are no longer pink in the middle, about 8 minutes. Salt and pepper to taste.
Stack the tortillas, 3 at a time, in a microwave oven and heat until warm and pliable, 20 to 30 seconds per batch.
Spread each tortilla with 1 tablespoon of the cream cheese-dressing mixture. Divide remaining ingredients into into six portions and top each tortilla with a layer of apples, walnuts, avocados, the chopped lettuce; arrange the chicken on the lettuce. For a little added flavor drizzle with a little extra oriental dressing before rolling up.
Fold the bottom of each tortilla up about 2 inches, and start rolling the burrito from the right side. When the burrito is half-rolled, fold the top of the tortilla down, enclosing the filling, and continue rolling to make a tight, compact cylinder.
