Parmesan Shrimp & Peppers


This recipe is excellent to take for lunch. I assemble it the night before and cook it in the microwave at work.

  • 2 dozen shrimp, peeled, deveined
  • ½ cup thinly sliced onions
  • ½ cup each thinly sliced green & red peppers
  • ½ cup sliced mushrooms
  • 2 tablespoons thinly sliced butter
  • ½ cup coarsely shredded Parmesan cheese
  • 3 cups cooked rice, hot

Step 1

Layer first six ingredients in order in a glass baking dish, cover with plastic wrap.

Step 2

Micro-cook the shrimp for 2-5 minutes until the shrimp are opaque

Step 3

Pour over the cooked rice
