Ingredients

  • 1 pkg Devils Food Cake mix (no pudding)
  • -bake according to package directions.
  • Frosting and filling:
  • 1 8oz Cream Cheese, softened
  • 2/3 C packed brown sugar
  • 1/8 tsp salt
  • 1 tsp Vanilla
  • 2 C whipping cream, whipped
  • 2 Tbls grated semi-sweet chocolate

Preparation

Step 1

Bake cake according to package directions in 2 round cake pans. let cool completely. Slice each round in half making 4 rounds.

Step 2

Frosting:" Beat together cream cheese, sugar, vanilla and salt until fluffy. In separate bowl whip the whipping cream (do not over whip), Gently fold in the cream cheese mixture and mix until blended.

Step 3

Place one cake round on a plate and smear with frosting and sprinkle with a light dusting of the grated chocolate. Repeat for all 4 layers and then finish sides of cake with remaining frosting. sprinkle with more chocolate dusting and add some chocolate curls for looks.

Step 4

Chill this cake for at least a couple of hours before serving. Delicious!!!

  • 1 shortcrust pastry
  • 3 cups / 750 g. of cherries
  • 1/3 cup / 60 g. of sugar
  • 2/3 cup / 60 g. of almond flour

METHOD: 

  1. Mix the cherries and sugar together. Let stand 20 minutes.
  2. Spread or roll out the shortcrust pastry, sprinkle with almond powder and brown sugar.
  3. Place the cherries in the center of the dough, leaving about 2 inches of free dough on the edges. Fold in the edges.
  4. Brush with milk (this will make the crust go golden), sprinkle with brown sugar and bake for 20 minutes at 350°F/180°C.
  5. Top with a handful of chopped pistachios, and serve!
