Strawberry White Chocolate Chip Cookies

Ingredients

  • 1-1/2 cups All Purpose Flour
  • 1/2 tsp Salt
  • 1/2 tsp Baking Soda
  • 1 Eggs
  • 1 tsp Vanilla Paste
  • 1/2 cup of Unsalted Butter softened at room temperature
  • 1/3 cup of Granulated Sugar
  • 1/3 of a Cup of Brown Sugar
  • 1 cups White Chocolate Chips
  • 1 cup of Fresh Strawberries, diced
  • Zest of 1/2 of an Orange

Preparation

Step 1

Preheat your oven to 375 degrees.

Step 2

Combine together the first 3 ingredients and set aside.

Step 3

In a mixer bowl fitted with a paddle attachment, cream together the butter and both sugars. Add the eggs, orange zest and vanilla and mix together until all creamy and combined. Scrape down the sides of the bowl to make sure everything is mixed well.

Step 4

Add the dry ingredients and mix just to combine. Add the chocolate chips and strawberries and mix just to distribute them through the batter.

Step 5

Using a small ice cream scoop, drop the cookie dough 2 inches apart onto an un-greased baking sheet and bake for 10 to 12 minutes, until lightly golden brown around the edges.

Step 6

Cool for 5 minutes on the baking sheet then remove onto wire rack and cool completely.

  • 1/4 cup / 50g of softened butter
  • 1 egg (divide the yolk and white)
  • 1/4 cup / 50g of sugar

METHOD:

  1. In a bowl, mix together the butter, egg yolk, sugar, and salt.

  2. Add the flour and mix. Roll into a ball.

  3. Chill for 30 minutes.

  4. Remove from refrigerator. Divide the dough and roll into 1-inch balls.

  5. Dip each ball in egg yolk, and then roll in chopped nuts.

  6. Place on baking sheet (lined with parchment paper), and press your thumb into the center.

  7. Bake at 340°F/170°C for 12 minutes, or until golden.

  8. Remove from oven and let cool.

  9. Pour the salted caramel into the center groove,and drizzle with dark chocolate.
