Squares: Cranberry Crumble

Yummy squares that are a great way to use up any leftover holiday cranberry sauce!

Ingredients

  • 3/4 cup Sugar
  • 2 cups Flour
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 3/4 cup medium-soft Butter
  • 1 beaten Egg
  • 2 cups Cranberry Sauce

Preparation

Step 1

Heat oven to 350F.

Step 2

Stir the flour, sugar, baking powder and salt. Cut in the butter until the lumps are no bigger than peas *.

Step 3

Stir in the egg just a little, but keep the mixture somewhat crumbly.

Step 4

Sprinkle half the mixture in an even layer in the bottom of square cake pan. Spread it out and push it down so that it forms a uniform crust on the bottom.

Step 5

Spread the cranberry sauce over the crust so that it totally covers crust. Then spread remaining crumble mixture over the cranberry sauce.

Step 6

Bake 35-40 mins until crumble mix is golden brown.

* To Cut In Butter: Use a pastry blender, a whisk or 2 forks to keep combining the butter with flour until it breaks down tiny lumps smaller than peas.

Change it up option: Instead of making squares, use lined muffin tins to create individual fruit crumble tarts. Do the same technique, pushing the crush down, spooning on the cranberry (or other pie filling) and topping with crumble. You may need to watch oven carefully and adjust timing if necessary.
