- Fresh strawberries
- Any varietal of red wine
- Orange slices (optional)
- Sugar/Zero calorie sweetener (optional)

Preparation
Step 1
Wash and slice the strawberries in half.
Step 2
Place them in a bowl that you can store in your fridge for a few hours.
Step 3
Pour in red wine – it doesn’t have to be expensive or ‘good’ wine.
Step 4
If you have an orange, make some slices and put them in with the strawberries and wine.
Step 5
If you don’t think the sweet strawberries are sweet enough for you or your guests, sprinkle in some real sugar or zero calorie sweetener like Splenda, Stevia, Truvia.
Step 6
Cover the bowl and store in the fridge for hours – the longer the better, as the strawberries will get drunker.

Combine summer zucchini with leftover mashed potatoes for a delicious, savory treat!
INGREDIENTS
- 5 Potatoes
- 1.5 Cup shredded zucchini
- 3/4 Cup shredded cheese
- 3/ Cup milk
- 1/3 Cup coriander, chopped
- 1/3 Cup basil, chopped
- Parmesan, to sprinkle
- Salt and pepper, to season
METHOD
- Chop the potatoes in half, boil until very tender and drain.
- In a bowl, combine the potatoes and zucchini. Add the grated cheese, milk, coriander, basil, salt and pepper, and mix thoroughly.
- On a baking tray, spoon out the zucchini-potato mixture and form into balls.
- Sprinkle with Parmesan and grated cheese, and bake at 350°F for 15 minutes.
- When golden, remove from oven... and enjoy!
