Chocolate

You've probably already seen the words "dark, white or milk chocolate chips" or "dessert chocolate" before. If you don't have it, don't panic! Keep that recipe book open, and simply replace whatever's asked for with any old chocolate bar. Dessert chocolate usually comes in the form of high-quality chocolate chips used by pastry chefs and chocolate makers with a minimum of 31% to 32% cocoa butter. But for your homemade recipe needs, chocolate bars will get the job done.

If you've discovered a chocolate cake recipe that calls for dark chocolate and you want to replace it with white chocolate, reduce the overall amount of fats because white chocolate already contains more fat than dark varieties. And if you decide to use milk chocolate, reduce the amount of sugar in the recipe.
