Finally, some good news. 

Pizza can actually have powerful anti-ageing properties, but only if you use the right ingredients. 

In a new study from Penn State University, one of our favorite pizza toppings, mushrooms were found to have unusually high levels of two antioxidants that are linked to fighting ageing, and boosting overall health.

The antioxidants in question are ergothioneine and glutathione, and although they are present in all varieties of mushrooms, their levels vary greatly.

The mushroom with the lowest levels of these antioxidants is the white button mushroom. The highest? The Italian porcini, which has the highest levels "by far, of any we tested," according to the Robert Beelman, professor emeritus of food science and director of the Penn State Center for Plant and Mushroom Products for Health. 

Replenishing the body's natural store of antioxidants like these may play a very important role in combating free radicals.  "The body has mechanisms to control most of them," Beelman said "but eventually enough accrue to cause damage, which has been associated with many of the diseases of aging, like cancer, coronary heart disease and Alzheimer's."

In more great news, cooking the mushrooms do not destroy these precious compounds, which are relatively heat-stable.

We are definitely making these Easy Cheesy Mini Pizzas for our next party!

Ingredients

  • Pizza Dough (homemade or store bought)
  • Shredded cheese
  • Pizza sauce
  • Cured ham, shredded
  • 4 eggs
  • Cherry tomatoes
  • Fresh basil

Method

  1. Roll out the dough
  2. Use a small bowl to cut the dough into rounds
  3. Add shredded cheese
  4. Place in oven on an oven tray afr 10 min at 355°F
  5. Put each dough round into a ramekin
  6. Add 1 tbsp pizza sauce, a handful of shredded cured ham 
  7. Break an egg into each pizza
  8. Top with sliced cherry tomatoes and a basil leaf
  9. Place in oven for another 15 mins at 355°F
  10. Garnish with parsley and a pinch of pepper
  11. Serve and enjoy!
