Roasted Pumpkin is the Star Ingredient in this Easy Fall Salad

Try this original idea for fall salad with roasted pumpkin and rich camembert cheese. Add to a main dish as a side, or enjoy for lunch.

Ingredients (4 people)

For the salad:

  • 1 small pumpkin (Hokkaido)
  • 3 slices of country-style (or artisan) bread
  • 1/2 wheel of camembert cheese
  • 2 handfuls of pumpkin seeds
  • Pinch of salt
  • 1 tbsp olive oil
  • Fresh thyme leaves

For the vinaigrette:

  • 3 tbsp olive oil
  • 1 tsp balsamic vinegar
  • salt and pepper

INGREDIENTS

  • Peanuts
  • Carrot
  • Mango
  • Rocket
  • 2 limes
  • Olive oil
  • Soy sauce
  • Red onion, minced
  • Salt
  • Pepper

 

METHOD

  1. Lightly sautée the peanuts until golden.
  2. Take the carrots and cut into thin slices.
  3. Peel the mango and slice into thin strips.
  4. Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
  5. In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
  6. Enjoy!
