Always Get Fresh Cilantro

When buying cilantro, look for bunches that have bright, evenly-colored green leaves, showing no signs of yellowing or wilting. Keep it fresh by placing the stems in a glass of fresh water, covering loosely with a plastic bag and placing in the fridge until you need it. Generally only the leaves of cilantro are used, so make sure you cut off the stems before chopping. Also, don't forget to rinse the bunch well, so you don't have any grittiness in the finished guac.

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
