Why The Long Wait?
According to Murphy, the wine needs time to sit so the fizziness or CO2 levels can go down. He also advises leaving the bottle somewhere dark and at room temperature to quicken the process. After 8 days, he noticed the fizziness had almost completely disappeared, and 2 days later, it was bubble-free. But he notes that you can even wait up to a month to try it, if you've got the time and patience.
