My Potato Salad

I've taken a family recipe and made it my own
- 1-5 lb bag of red potatoes
- 1 medium yellow or vidalia onion
- 1 carrot
- 6 hard boiled eggs
- 1 1/2 cup mayo
- 1/4 to 1/2 cup milk
- salt & pepper
- This recipe can be doubled or even tripled as needed.
Dannielle's Baked Macaroni & Cheese

Another old, family recipe that was made over and over again while I was growing up
- 1 lb of Colby or Colby Jack Cheese - shredded
- 1 lb of Sharp Cheddar Cheese - shredded
- 1 large onion - chopped into a fine dice
- 1 large can of diced tomatoes
- 1lb of Pasta - Any large "tube" pasta will do. Rigatoni or Macaroni (where available) or Cavatappi
- Salt & Pepper
Dannielle's Lasagna Roll-Ups

A easy twist on the classic layered lasagna
- 1 box of lasagna noodles
- 1 large container Ricotta Cheese
- 1 lb Mozzarella cheese - shredded
- 1 1/4 cup Parmesan cheese - grated
- 2 eggs
- 1 tablespoon dried Italian seasoning
- 1 package thick and zesty Spaghetti Sauce Packet (dry)
- 2 bay leaves-crumbled with the stem removed
- 1 lb ground beef - browned and drained
- 1 large jar good spaghetti sauce
Dannielle's Stuffed Green Peppers

My take on a traditional stuffed pepper and you don't have to used green peppers
- 6 Large Green (or any color) Peppers
- 1 lb ground beef
- 1 small onion, diced small
- 1 cup beef broth
- 1 16 oz can diced tomatoes
- 1 cup instant rice
- 1 tablespoon onion powder
- 1 teaspoon garlic powder
- Salt & Pepper to taste
- 1 32 oz can CRUSHED tomatoes
Nana's Brownie Cupcakes

Brownies baked in cupcake pans
- 1 box of brownie mix any kind as long as it makes a 9" x 13" inch pan.
- 1/3 cup cold coffee
- 1/2 coconut oil
- 3 eggs
- cupcake papers (your choice on whether you want to do mini or regular size)
- cupcake pans
- Preheat oven to 350*
Dannielle's Chicken with Green Chili Enchilada Casserole

My twist on chicken enchiladas
- 4 boneless, skinless chicken breasts that have been either poached or cooked ahead of time in the crock pot
- 1 -24 count package of CORN tortillas (you need 16 tortillas for this recipe)
- 1 small can of green chili
- 1 12 oz can cream of chicken soup
- 1 12 oz can of green enchilada sauce
- 4 cups shredded Mexican cheese blend OR Mild/Medium Cheddar Cheese Shredded
