Scallops with Lobster Cream

  • 1 pound of scallops
  • 2 egg yolks
  • 2 tablespoons champagne brut
  • 1 stick of salted butter
  • 6 tablespoons of lobster bisque
  • cayenne
  • pepper

Step 1

Divide the scallops into 6 ramekins.

Step 2

Whisk the yolks with the champagne on low heat (better in a water bath) until mixture is creamy and doubled in volume.
Add melted butter, lobster bisque and pepper. Sprinkle pepper.

Step 3

Cook scallops on the grill a few minutes. Add sauce.
