Ingredients
- 4 pork chops (bone in)
- 1 cube of vegeta (chicken broth)
- 1 Spanish onion
- 2 lbs of white whole mushrooms
- 5 large potatoes
- 3 teaspoons of extra virgin olive oil
- 1 rounded teaspoon of salt
- 1 rounded tablespoon of flour
- 1 table spoon of margarine
- 100ml of milk
- 2 cups of water

Preparation
Step 1
Peel and cut potatoes into cubes.
Dice onion.
Remove stock, peel and slice mushrooms.
Step 2
In a large pot bring one teaspoon of salt, one teaspoon of oil, and potato cubes too a boil.
In a large pan add one teaspoon of oil and brown pork chops.
Step 3
In another large pot heat one teaspoon of oil. Add diced onions. When onions start to turn yellow add mushrooms and place lid on pot for five minutes.
Step 4
Remove lid from pot and add pork chops.
Add two cups of water and crushed vegeta cube.
Replace lid and bring water to a boil.
Step 5
In a separate bowl sift flour in cold water.
Step 6
Once potatoes become very soft, drain and mash them. Add a pinch salt, a tablespoon of margarine, a dash of milk and mix all ingredients thoroughly.
Step 7
Remove pork chops from pot and place on serving plates. Remove pot from heat source. Slowly add flour and water mix to pot while continuously stirring.
Step 8
Add mashed potatoes to serving plates and pour the mushroom gravy over the pork chops and potatoes.

When sifting the flour into the water make sure the water is as cold as can be. Fresh water out of the fridge I find is best. If the water is warm at all, even room temperature it will clump and the gravy will not turn out well. :(
When adding the mixture to the pot be sure to mix very quick and continuously until pouring gravy onto plates.
