Cranberry Pork

Ingredients

  • pork
  • 1 Tbsp butter
  • 1 chopped onion
  • 1 tsp dried rosemary
  • 3/4 cup frozen cranberries
  • 3/4 cup chicken broth
  • 1 can whole cranberry sauce
  • 1 Tbsp balsamic vinegar

Preparation

Step 1

sear pork and remove from pan

Step 2

cook onion and rosemary in butter

Step 3

add cranberries, broth, cranberry sauce and vinegar

Step 4

add pork back to pan and simmer, uncovered for 15 minutes or so

Step 5

serve over mashed potatoes (or rice, I guess, but we love the potatoes so much we've never tried it!)

for the pork, I've used chops (5) or cubed pork (1/2 to 1 pound) We love the sauce so much, we were fishing around the meat to get more sauce, so it doesn't need tons of meat

Method

  1. Fry the bacon in a skillet, then add onion, and meat.
  2. Add tomato paste, bell peppers, garlic and salt, and simmer till cooked through
  3. Boil 1 whole cabbage head in salted water till tender
  4. Spoon mixture into individual cabbage leaves, and fold carefully to form little rolls
  5. Serve with any remaining mixture
  6. Enjoy!
