Squash Relish


Have excess squash from the garden use zucchini or yellow squash to make this refreshing relish instead of your cucumbers.

  • 10 c zucchini or yellow squash shredded
  • 4 c chopped onions
  • 1 red pepper chopped
  • 2Tbsp salt
  • add
  • 4 1/2 c sugar
  • 1 t celery seed
  • 1 t turmeric
  • 1 t black pepper
  • 2 1/4 c vinegar

Step 1

Mix, set overnight the first 4 ingredients.
Rinse next morning. Add the rest of the ingredients.

Step 2

Process in jars 15 minutes


Makes 6-8 pints.
