  • 3 slices of stale bread, 3 tbsp. butter-divided, 1 tbsp. sugar, 1/2 tsp. salt, 1/2 tsp. basil, 1/4 tsp. pepper, one 28oz. can tomatoes.

Preparation

Step 1

Toast stale bread. Butter the slices with 1 tbsp. of the butter and cut each into 16 little squares. On a plate dry them out until crisp in oven at 250 degrees f. It takes about 20 mins. Into medium baking dish put one third of the toast squares. Pour I/2 of the can of tomatoes over them. Mix together in a cup the sugar, salt, basil and pepper. Sprinkle one half of this over tomatoes. Cover with another one-third of toast squares. Pour over remaining tomatoes. Sprinkle remaining seasonings over. Top with last one-third of toast squares, pushing corners of them into top tomatoes but let some show above surface. Dot top with remaining 2 tablespoons of butter. Now it is ready to bake but should be refrigerated for 2 to 3 hours to allow tomato juice to soak dry toast.

Step 2

Bake at 350 degrees f. for 45 minutes.
