MY BREAKFAST BURRITO

A crispy eggy cheesy smothered with Bacon gravy goodness

Ingredients

  • 6 STRIPS OF BACON COOKED AND CRUMBLED
  • 6 EGGS SCRAMBLED
  • 1 TABLESPOON BUTTER
  • 1 SMALL ONION DICED
  • 6 TORTILLA SHELLS FLOUR
  • 2 TABLESPOONS OIL
  • 1 CUPS CHEDDAR CHEESE SHREDDED
  • 3 TABLESPOONS FLOUR
  • 1 1/2 CUPS MILK
  • SALT AND PEPPER
  • 1 PINCH OF WHITE SUGAR

Preparation

Step 1

Cook Bacon in Microwave for 1 minute 30 seconds and then put the Bacon on a papertowel, next pour the Bacon grease into a medium skillet now put the Bacon back in microwave for another minute and 30 seconds and now the Bacon should be nice and crspy pour any remaining Bacon grease into the skillet. Now in another skillet or pan melt the Butter and saute the onions until soft and then add the beaten up Eggs and scramble them to your liking. When they are done put to the side

Step 2

Now heat up another pan with the Oil and get pan hot
fry the Tortillas to your liking But do NOT fry them to crispy then it wont make a good Burrito Place the cooked Tortillas on a papertowel And put them aside

Step 3

Now heat up the Bacon grease and let it get hot on about medium high When it is hot sprinkle the Flour into the pan stirring it until mixed with the grease, Add some Salt and Pepper and a pinch of white sugar Then slowly add the Milk until a white gravy forms remove from heat

Step 4

Now take the Egg pan and divide the scrambled Eggs up into 6 equal portions Next take a tortilla and place it on a plate and then put one of the 6 equal Egg portions on the Tortilla along with a sprinkle of the Bacon and a sprinkle of the Cheddar Cheese now top all that wih a spoon full of the Bacon gravy Make sure to leave enough Bacon and Cheese and gravy for the remaining other Burittos
So now just repeat this process until all 6 Burittos have been made. If theres enough gravy left over we like to spoon it over the tops of our Breakfast Burittos
