Baked Chicken Strips

Ingredients

  • 1 pound skinless, boneless chicken breast tenders or halves
  • 1/2 C. low-sodium chicken broth
  • 1/4 C. low-sodium soy sauce
  • 3 T. vinegar
  • 2 T. sugar
  • 2 T. brown sugar
  • 1 tsp. ginger
  • 1/4 tsp. garlic powder
  • 1/4 tsp. pepper

Preparation

Step 1

Cut chicken into approx. 16"wide strips and place in one layer in baking dish. Blend all the ingredients (except pepper) well. Pour over chicken. Sprinkle with pepper. Cover and let stand in refrigerator at least 2 hours (I find the longer, the better), turning strips occasionally. Uncover and bake in marinade a 350 degree oven for 20 min., basting halfway through. Serve without the marinade.

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
