- 1 medium size zucchini
- 1 large egg
- 1/2 cup of flour
- salt 1/2 tsp
- garlic powder 1/2 tsp
- onion powder 1/2 tsp
- mayonnaise 1 tbsp
Zucchini Pancakes

Put zucchini in a towel and squeeze out moisture
- 2 cups shredded zucchini
- 1 1/4 cups flour
- 2 tsp baking soda
- 1 tsp pumpkin pie spice
- 1/4 tsp salt
- 2 eggs
- 1 cup + 2 tbs milk
- 2 tbs melted butter
- 2 tbs brown sugar
- 1 tsp vanilla
- 1/2 cup toasted pecans
