In a bowl mix semolina, all purpose flour, salt and warm water
- All-purpose flour 1 tbsp.
- Semolina (Sooji ) 1 cup makes 100 puris
- Salt 1 tsp
- Warm water ½ cup as needed
- Oil For deep frying
- Ingredients for stuffing:
- Curd
- Boiled and mashed potato
- Chana
- Onion
- Red tamarind chutney chaat
- Green chutney chaat
- Chili sauce
- Thick curd+ salt + chaat masala
Pani for pani puri

Make a coarse paste of mint, cilantro and green chili
- Mint leaves ¼ cup
- Cilantro ¾ cup
- Green Chilies 2 to 4
- Tamarind pulp 3 tbsp.
- Lemon juice 3 tbsp.
- Black salt 1 tsp
- Salt 1 tsp
- Ginger powder 1/4 tsp
- Hing 1/8 tsp
- Cumin powder 1 tbsp.
- Coriander powder ½ tsp
- Chili powder ½ tsp
- Sugar 1 tbsp.
- Black pepper 1/2 tsp
- Water (adjust to taste) 4 cups

Mix everything and microwave for 10 min or boil on stove top for 5 min
- Tamarind pulp diluted 1 cup
- Sugar 2 cups
- Food color a pinch
- Pepper powder ¼ tsp
- Cumin powder ½ tsp
- Chili powder 1 tsp
- Coriander powder 1 tsp
- Fennel seed powder ½ tsp
- Ginger powder ¼ tsp
- Black salt 1 tsp
- Salt ½ tsp
