Ingredients
- Mint leaves ¼ cup
- Cilantro ¾ cup
- Green Chilies 2 to 4
- Tamarind pulp 3 tbsp.
- Lemon juice 3 tbsp.
- Black salt 1 tsp
- Salt 1 tsp
- Ginger powder 1/4 tsp
- Hing 1/8 tsp
- Cumin powder 1 tbsp.
- Coriander powder ½ tsp
- Chili powder ½ tsp
- Sugar 1 tbsp.
- Black pepper 1/2 tsp
- Water (adjust to taste) 4 cups

Step 1
Make a coarse paste of mint, cilantro and green chili.
Add the spices to paste and mix in the water.
Add or omit the spices as per your taste.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!
INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
- Enjoy!
