Preheat ovento 450F. Spray a shallow baking pan with cooking spray
- 1/3 cup bread crumbs
- 1/2 tsp freshly ground black pepper
- 1/4 salt
- 1 egg white, lightly beaten
- 1 pound cod or haddock fillets, cut into 1 1/2 inch wide strips
- 1 Tbsp olive oil
- For the Chips
- 2 medium russet potatoes
- 1 Tbsp olive oil
- 1/4 tsp salt
Garlic Grilled Scallops

In a shallow dish, combine lemon juice, wine, garlic, bay leave, lemon peel, and pepper
- 1/3 cup fresh lemon juice
- 1/3 cup dry white wine or chicken broth
- 4 cloves garlic, minced
- 2 bay leaves
- 1 tsp grated lemon peel
- 1 tsp black pepper
- 1 1/2 pound sea scallops
- 4 cups large mushroom caps
- 3 medium bell peppers, cut into 1 inch squares
- 3 medium green bell peppers, cut into 1 inch squares
- 2 large red onions, cut into 1 inch squares
Crispy Coated Scallops

Rinse scallops under cold running water; pat dry with paper towels
- 1 pound sea scallops
- 3 Tbsp margarine, melted and divided
- 1/4 cup plain bread crumbs
- 2 Tbsp grated Parmesan cheese
- 1/2 tsp paprika
- 1/8 tsp black pepper
- 1 Tbsp fresh lemon juice
Stuffed Pasta Shells

Preheat oven to 350F. In a small saucepan, combine the sauce and 2 Tbsp of basil
- 1 jar (14 oz) spaghetti sauce
- 4 Tbsp chopped fresh basil or parsley, divided
- 12 jumbo pasta shells
- 1 cup part skim ricotta cheese
- 1/4 cup shredded part skim mozzarella cheese
- 2 egg whites, lightly beaten
- 1/3 cup chopped green onion
- 1/4 cup grated Parmesan cheese (optional)
Tortellini with Vegetables

Cook tortellini according to package directions, but do not add salt
- 1 package (16 oz) fresh spinach tortellini
- 1 Tbsp olive oil
- 2 cloves garlic, sliced
- 1 cup sliced mushroom
- 3 medium tomatoes, seeded and chopped
- 1 cup cooked broccoli
- 1 Tbsp chopped fresh oregano or 1 tsp dried
- 1/8 tsp salt
- 1/8 tsp black pepper
- 2 Tbsp Parmesan cheese (optional)
Rustic Lasagna

Cook lasagna noodles according to package directions
- 9 lasagna noodles
- 2 cans (8 oz) tomato sauce
- 1 clove garlic, minced
- 1 tsp fresh oregano or 1/4 tsp dried oregano
- 1 package (10 oz) frozen chopped broccoli, thawed and squeezed of excess liquid
- 1 cup shredded carrot
- 1 container (15 to 16 oz) part skim ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1 cup shredded part skim mozzarella cheese
Twice Baked Potatoes

- 1/2 cup diced green bell pepper
- 1/3 cup chopped yellow onion
- 1 cup thinly sliced mushrooms
- 2 slices Canadian bacon or lean ham, diced
- 3/4 cup shredded cheddar cheese, divided
- 3 Tbsp skim milk

- 1 1/4 cups milk
- 1 tsp vanilla extract
- 1 cup confectioners sugar
- 3 Tbsp unsweetened cocoa powder
