Make bread crumbs in food processor so they are chopped up fine
- 1 pound crab meat
- 3 slices of white bread, crust removed
- 1 egg beaten
- 1 Tbsp mayonnaise
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1 Tbsp Old Bay Seasoning
- 1 Tbsp parsley
Cheese-filled Crepes

In a medium bowl, whisk together milk, flour, eggs, oil, vanilla and salt
- 1 1/2 cups low fat milk
- 1/2 cup flour
- 2 large eggs
- 1 tsp vegetable oil
- 1/2 tsp vanilla extract
- 2 cups low-fat cottage cheese
- 2 cups mixed berries for topping
- confectioner's sugar for garnish
Breakfast Hash Browns

In a large saucepan, combine potatoes and enough water to cover
- 3 medium russet potatoes
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1/2 cup shredded sharp cheddar cheese
- 2 slices turkey bacon, cooked and crumbled ( optional)
- 2 green onions, finely chopped
Cinnamon French Toast

In a shallow bowl, using a wire whisk or fork, beat the egg and egg whites until foamy
- 1 large egg
- 2 egg whites
- 1/4 cup skim milk
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/8 tsp nutmeg
- 9 1-inch think diagonally cut slices French or Italian bread
- Cinnamon sugar and maple syrup (optional)
Apple Bread Pudding

Preheat oven to 350F. Spray a 2 quart casserole dish with vegetable cooking spray
- 8 slices day old whole wheat bread, cut into 1/2 inch cubes (about 4 cups)
- 2 medium red delicious apples, peeled, cored and chopped (about 1 1/2 cups)
- 1/4 cup golden raisins
- 2 cups skim milk
- 1/2 cup maple syrup
- 2 large eggs, lightly beaten
- 1 tsp vanilla
- 1/4 tsp ground cinnamon
- 1 egg white
- 1 Tbsp sugar
- light frozen whipped topping thawed for garnish
Apple Dumpling Desert

Preheat oven to 400F. In a large bowl, combine apples, dried fruit, apple juice, cornstarch, and ginger
- 6 large baking apples, peeled, cored and sliced 1/2 inch thick (about 6 cups)
- 1/4 cup mixed dried fruit
- 1/3 cup sweetened apple juice
- 1 Tbsp cornstarch
- 1/2 tsp ground ginger
- DUMPLINGS
- 3/4 cup flour
- 1 Tbsp sugar
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/3 cup buttermilk
- 1 Tbsp butter, melted
- 1/4 tsp ground cinnamon
Chocolate Fondue

In a small saucepan over medium heat, whisk together the milk, brown sugar, and cocoa until smooth
- 1/4 cup skim milk
- 1/2 cup firmly packed light brown sugar
- 2 Tbsp unsweetened cocoa powder
- 4 oz light cream cheese, softened
- 1 tsp vanilla extract
- 2 pounds chilled mixed fruit and berries, peeled and sliced as necessary
- 1 cup cubed angel food cake (optional)
Chocolate Sauce

- 3 Tbsp sugar
- 1/4 cup unsweetened cocoa powder
- 1 Tbsp instant coffee powder (optional)
- 1 tsp cornstarch
- 1/2 cup dark corn syrup
- 1/4 cup skim milk
- 1 Tbsp margarine
- 1 square bittersweet chocolate
- 1 tsp vanilla extract or 1/4 tsp almond extract
- 1/4 cup sliced almonds, toasted for garnish
Sweet Apple Turnovers

- 2 large garlic cloves, minced
- 2 tsp Worcestershire sauce
- 1 tsp hot sauce
- 1/2 tsp old bay seasoning
- salt and pepper to taste
