Tuna and Green Bean Pasta Salad

Cook pasta according to package directions but do not add salt
- 8 oz tricolor corkscrew pasta
- 8 oz green beans, trimmed and cut into 2 inch pieces
- 1 medium red onion, thinly sliced
- 1/2 cup reduced fat Italian salad dressing
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 1 can (6.5 oz) tuna packed in water, drained and flaked
- 1/4 cup pitted sliced black olives (optional)
- fresh basil springs for garnish
Macaroni Salad

Prepare macaroni according to package directions, but do not add salt
- 1 pound elbow macaroni
- 1 cup nonfat mayonnaise
- 1 Tbsp cider vinegar
- 1/2 tsp sugar
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup chopped celery
- 1 medium green bell pepper, chopped
- 1 medium red bell pepper, chopped
- 1 medium yellow onion, chopped
Tortilla Chicken Salad

Preheat oven to 450F. Using small, sharp knife or scissors, cut tortillas into 1/4-inch strips
- 3 6-inch corn tortillas
- 2 small hears of Romaine lettuce, rinsed, dried and torn into bite size pieces
- 2 cups shredded cooked chicken breast
- 1 small tomato, seeded and diced
- DRESSING
- 1 Tbsp olive oil
- 2 Tbsp orange juice
- 2 Tbsp fresh lime juice
- 2 Tbsp chopped fresh cilantro
- 1 clove garlic, minced
- 1/2 tsp dried oregano
- 1/8 tsp hot pepper sauce
Salsa Chicken Fiesta

- 2/3 cup Bisquik
- 2 Tbsp water
- 1 egg
- 1 1/2 cups shredded cheddar cheese
- 2 tsp vegetable oil
- 3 boneless skinless chicken breast halves, cut into 1/2" pieces
- 1 1/4 cup thick and chunky salsa
Fast to Fix Fajitas

- 1/4 cup fresh lime juice
- 2 tsp olive oil
- 1/2 tsp chili powder
- 4 skinless, boneless chicken breast
- 2 medium red bell peppers, cut into wide strips
- 1 large red onion, cut into wedges
- 2 medium tomatoes, chopped and divided
- 1/2 cup chopped green onion
- 1/4 cup chopped fresh cilantro or parsley, divided

Quick Lasagna Rolls

Creamy Beef Stroganoff

- 2 tsp olive oil
- 12 oz lean boneless sirloin steak, trimmed and cut into strips
- 2 cups sliced mushrooms
- 1/2 cup reduced sodium chicken broth, divided
- 1/3 cup chopped yellow onion
- 1 clove garlic
- 1 1/2 tsp paprika
- 4 oz wide egg noodles
- 1/4 cup nonfat sour cream
- 1/4 cup plain nonfat yogurt
- 1 Tbsp chopped fresh dill
Layered Buffalo Bake

Preheat oven to 500F. Spray a 9x13 inch baking dish with cooking spray
- Cooking spray
- 6 Tbsp Hot Sauce
- 1/3 cup olive oil
- 2 Tbsp garlic powder
- 1 Tbsp freshly ground black pepper

- 1 1/2 tsp salt
- 8 potatoes cut into 1/2 inch
- 2 pounds chicken breast cut into cubes
- 2 cups shredded Mexican cheese
- 1 cup crumbled, cooked bacon

Brined and Roasted Turkey

To Brine: dissolve the salt and sugar in 2 gallons of cold water in a non-reactive container
- BRINE
- 1 cup salt
- 1 cup brown sugar
- 2 oranges, quartered
- 2 lemons, quartered
- 6 sprigs of thyme
- 4 sprigs of Rosemary
- TURKEY
- 1 turkey
- 4 Tbsp butter at room temperature
- 1 large yellow onion, cut into 8ths
- 1 large orange, cut into 8ths
- 1 stalk celery, cut into 1 inch pieces
- 1 large carrot, cut into 1 inch pieces
- 2 bay leaves
- 2 springs thyme
- 1 1/2 to 2 cups chicken or turkey stock.
- TURKEY BROTH
- 1 Tbsp vegetable oil
- Reserved turkey neck and giblets
- 1 large carrot, coarsely chopped
- 1 onion, coarsely chopped
- 1 large celery stalk, coarsely chopped
- 1 bay leaf
- 3 cups turkey or chicken stock
- 3 cups water
- GRAVY
- 4 cups turkey broth
- 1 cup dry white wine
- 4 Tbsp butter
- 1/4 cup flour
- salt and freshly ground black pepper
Buffalo Chicken Mac & Cheese

- 3 cups rotisserie chicken or pre-cooked grilled chicken, shredded
- 2 cloves garlic minced
- 3/4 cup hot sauce divided
- 2 Tbsp flour
- 2 tsp dry mustard
- 2 1/2 half and half
- 3 cups extra sharp cheddar cheese, shredded
- 2/3 cup sour cream
- 1/2 cup blue cheese or Gorgonzola cheese crumbled
- 2 tsp hot sauce for sprinkling on top
