Spicy Chicken Bites
- 3 or 4 chicken cutlets depending on size
- 4 tbsp mustard
- 2 tbsp lemon juice
- Spices of your choice (for me curry
- coriander and cracked pepper)

Cut the cutlets into pieces. Make the marinade.
Leave at least 3 hours to allow the meat to marinate (overnight is better).
Sauté in a nonstick pan.
Deglaze pan juices with orange juice (if you have some).
Serve with a grain and crudity.
