Shrimp with Curry Mayonnaise

  • 1 egg yolk
  • 1 tsp mustard
  • 1 scant cup of neutral oil
  • Salt and pepper
  • 1 egg
  • 1/2 tsp curry powder
  • 1 tbsp coriander
  • 1 tablespoon cream
  • 15 shrimp with tails
  • 2 tbsp maple syrup
  • Pepper

Step 1

Boil the egg 10 minutes.

Step 2

For the mayonnaise: Place egg yolks in a bowl, then dijon mustard, pepper and salt and mix well with whisk. Add some oil and whisk. Continue to add the oil gradually, whisking steadily. Add the curry and coriander then reserve in the fridge.

Step 3

Put in a pan, maple syrup, then prawns. Caramelize them on high heat until browned.

Step 4

Mix the boiled egg with curry mayonnaise and sour cream. Put this mixture into serving spoons and pepper. Place one shrimp onto each spoon
