Ingredients

  • 4 lbs red potatoes (the small red potatoes are the best)
  • 8 hard boiled eggs, chopped
  • 2 c celery, chopped
  • 2 c white onion, chopped
  • 3/4 lb hickory smoked bacon
  • 3/4 c - 1 c apple cider vinegar (this depends on how tart you prefer the dressing and the type of vinegar used)
  • 3 c water
  • 4 TBS flour
  • 2 TBS Bourbon Smoked Sugar
  • drippings from cooked bacon
  • Bourbon Smoked Salt and Pepper
  • white pepper to taste
  • Bourbon Smoked Paprika

Preparation

Step 1

Peel potatoes if desired and boil in heavily salted water until desired doneness.

Step 2

Mix potatoes and remaining ingredients together in a large bowl.

Refrigerate at least 2 hours to allow flavors to meld.

METHOD

  1. Chop the potatoes in half, boil until very tender and drain.
  2. In a bowl, combine the potatoes and zucchini. Add the grated cheese, milk, coriander, basil, salt and pepper, and mix thoroughly. 
  3. On a baking tray, spoon out the zucchini-potato mixture and form into balls. 
  4. Sprinkle with Parmesan and grated cheese, and bake at 350°F for 15 minutes.
  5. When golden, remove from oven... and enjoy!
