Super Easy Meatloaf

Ingredients

  • box of Stove Top Stuffing mix for Pork
  • One medium chopped (fine) onion
  • One bunch of cilantro chopped fine
  • Bell Pepper chopped fine
  • 2 # ground beef 85/15 fat content or less (but not too lean)
  • 1 beaten egg
  • 2 tbl spoons of Lea and Perrins (worcestershire sauce)
  • 1 cup ketchup
  • Salt and pepper to taste

Preparation

Step 1

1/3 cup ketchup and 2 tsp Lea and Perrins (mix in bowl and set aside)

Step 2

Take the dry stuffing mix and dump into a large mixing bowl add all the remaining ingredients (except for the set aside mixture at the bottom of recipe), mix it up with your hands, stuff in a large loaf pan and bake for 40 minutes at 400 degrees. Take out of the oven spread the mixture (set aside) across the top put back in oven and bake for 10 more minutes. Your internal temp on the meatloaf should be 160 degrees. Take out of the oven and let cool for a few minutes then drain what goodies (juices are in the pan) into a new pan to use for making dripping gravy for the potatoes. Cut the meatloaf in the loaf pan after draining and letting it stand for a few minutes to firm up.

METHOD:

  1. In a bowl, mix together the butter, egg yolk, sugar, and salt.

  3. Chill for 30 minutes.

  4. Remove from refrigerator. Divide the dough and roll into 1-inch balls.

  5. Dip each ball in egg yolk, and then roll in chopped nuts.

  6. Place on baking sheet (lined with parchment paper), and press your thumb into the center.

  7. Bake at 340°F/170°C for 12 minutes, or until golden.

  8. Remove from oven and let cool.

  9. Pour the salted caramel into the center groove,and drizzle with dark chocolate.
