Barbados Pork Tenderloin or Roast
A sweet, spicy, super juicy and delicious pork rub.
- 3 lb boneless Pork roast or loin
- 1 Tbsp ground Cumin
- 1 Tbsp Chili powder
- 1 1/2 tsp ground Coriander
- 1 tsp Red Pepper
- 1 1/2 tsp Black Pepper
- 3/4 tsp Cinnamon
- 1/4 cup Brown Sugar
- 1/2 tsp Salt

Preheat oven to 350
Blend all ingredients (except pork) in a small bowl.
Rub all over the pork.
Bake roast or loin on a roasting rack for 45min-1 hr.
Internal temp should be at least 145
Remove from oven and rest for 10 minutes before slicing.
