Ingredients

  • Dough
  • 3 cups flour
  • 3 tblsp sugar
  • 1 tsp salt
  • 1 level tblsp instant dry yeast
  • 100g butter
  • ½ cup warm milk
  • ½ cup warm water
  • White Sauce
  • 1 full tblsp cake flour
  • 1 tblsp butter
  • 2 cups milk
  • ½ tsp salt
  • ½ tsp black pepper
  • Filling
  • 500g chicken cubes
  • 1 onion diced
  • 1 tblsp butter
  • 2 tomatoes diced
  • 1 tsp garlic
  • 1 tsp salt 1 tsp black pepper
  • 2 tsp chillie powder

Preparation

Step 1

Dough
mixed together milk and water
Mix everything together and make dough with milk and water.

Knead well. Cover and leave to rise until double its size.

Step 2

White sauce-
Braise the flour and butter then add the rest of the ingredients,stirring all the time so that you don’t have lumps. Cook until thick and saucy.

Step 3

Filling-
Braise onion in butter until soft,
add rest of ingredients and cook until done.
Allow to cool slightly.
Add all the white sauce.
Add ½ cup cheese if desired.
Mix and Use as Filling

Step 4

Assemble
Roll well risen dough into 1 big roti.
Cut out rounds.
Put filling in centre and seal tight,
either with egg or with laai mixture.

Step 5

If you want to freeze at this point you may do so,
or else leave calzone to rise a bit,
brush with egg and sprinkle tall and bake

Step 6

bake @ 325• until golden brown.

To bake frozen calzones, allow calzones to thaw on greased oven pan for 2 hours then bake as directed.

Step 7

Options- try using different fillings for the calzones, substitute the chicken for steak or pepperoni. Add different veggies and spices or sauces.
