Mini Zebra Muffins
These Zebra Muffins are adorable and delicious!
DEFAULT TITLE
- Eggs
- Sugar
- Olive Oil
- Milk
- Flour
- Baking Powder
METHOD
- Separate egg whites from yolk
- Whisk egg whites then add sugar, then set aside
- Put egg yolks in another bowl and whisk with sugar
- Mix in olive oil and milk
- Add whipped egg whites and fold into mixture with a spatula
- Divide into two new bowls
- Pour cocoa powder into one bowl and vanilla extra into the other
- Put vanilla mixture into each well of muffin tin
- Add a smaller layer of the cocoa mixture.
- Keep layering then top with the smallest layer of vanilla
- Put in oven and bake for 25 minutes at 350 degrees
- Serve!

- 9 oz. package corn bread stuffing mix
- 5 C. turkey, cooked and cubed
- 1 C. cheddar cheese, grated
- 1 can condensed cream of celery soup, undiluted (10 3/4 oz.)
- 1 can condensed cream of chicken soup, undiluted (10 3/4 oz.)
- 1/2 can condensed cream of mushroom soup, undiluted
- 6 oz. evaporated milk
- 3/4 C. swiss cheese, slices or shredded
Creamy Broccoli, Cheese and Turkey Casserole

This is a simple casserole recipe my mom gave to me years ago to use up Thanksgiving turkey leftovers
- 2 pounds broccoli florets
- 3 cups coarse shredded leftover turkey
- 3 tablespoons unsalted butter
- 1 large coarse chopped red onion
- 5 cloves minced garlic
- 1 coarse chopped red bell pepper
- 2 cups sliced white mushrooms
- 1-1/2 tablespoons cornstarch
- 3 tablespoons water
- 1 cup homemade turkey broth
- 1/4 cup dry white wine
- 3 tablespoons minced flat leaf parsley
- 1 tablespoon minced thyme
- 1 teaspoon minced rosemary fronds
- 1 teaspoon minced sage
- 1-1/2 cups heavy cream
- 1-1/2 cups crumbled goat cheese
- 1-1/2 cups crumbled Ritz type crackers
- 1/2 cup fresh grated Parmesan cheese
- 1/4 cup fine ground almonds or pecans
- Coarse kosher or sea salt
- Fresh ground black pepper

- 4 c cut up turkey
- 6 tbs butter
- 1 1/2 c cut up celery
- 1 medium onion, chopped
- 1/8 tsp pepper
- 1 can mushroom soup
- 1/2 to 1 c crumbs
