African Bullfrog

The African Bullfrog is considered a delicacy in parts of the continent, and it’s scientific name: Pyxicephalus edulis even contains the word "edible".  Yet this amphibian contains a variety of substances toxic to humans.The trick seems to be avoiding pre-pubescent frogs: eating them can lead to extremely painful urinary inflammation. Unfortunately, even in mature frogs, eating the wrong parts can cause the same symptoms and even kidney failure. Cooking the frogs in wooden bowls is believed to help remove the dangerous toxins, but perhaps it’s best to just stick to  sautéed frogs legs when you next visit France.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
