Use Plenty of Liquid

Whether you decide on wine, cider, broth, water, or a combination, make sure you use plenty of liquid! At no point during cooking do you want your roast to dry out. If you're using a dutch oven, or even just a deep pan covered in aluminum foil, every once in a while, remove the covering and baste the roast with liquid from the pot. Towards the end of cooking, you can take off the cover and turn on the broiler for a few minutes to give it some color.
