Perhaps the most important rule for making a tender Sunday roast is cooking it low and slow. Your oven should be between 300 and 350 degrees Fahrenheit, as you let the roast cook for a minimum of three hours—though 4-6 is better. The meat needs to be cooked to an internal temperature of at least 145 degrees, but for a melt-in-your-mouth tender roast, you'll want it to be closer to 195 degrees.
