Lemon Garlic Grilled Chicken

Ingredients
- 4-5lbs chicken pieces
- 6 lemons
- 6 cloves garlic
- salt & pepper
- 1 teaspoon oregano
- 1 large onion
- 1 tablespoon vinegar
- 1 tablespoon Adobo or seasoned salt
- 1/2 cup olive oil

Preparation
Step 1
Season chicken pieces with salt, pepper, oregano, and Adobo,
place in large airtight container.
Step 2
Slice lemons and onions, add to chicken, add vinegar.
Step 3
Smash garlic cloves with back of a spoon to break open, and add to chicken.
Step 4
Drizzle olive oil over chicken.
Step 5
Close container and shake vigorously. Refrigerate overnight, or for up to 2 days.
Step 6
Shake container again before grilling to coat chicken evenly with lemon oil.
Step 7
Place chicken on grill, cover with onions and lemons if desired.
Step 8
Grill until slightly blackened.
*DO NOT put cooked chicken back in the lemon oil or container.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!
INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
- Enjoy!
