Ingredients
- 2 tablespoons olive oil
- 1/2 teaspoon lime zest
- 1/8 teaspoon red pepper flakes
- 1 teaspoon cumin
- 1/4 teaspoon pepper
- 4 chicken breasts

Preparation
Step 1
Combine first 5 ingredients and brush on both sides of the chicken.
Step 2
Grill or cook in skillet until done. Serve with salsa and rice or noodles.
You could also use the spice mix as a marinade. I continue brushing the mixture on as I cook to give it more flavor.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!
INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
- Enjoy!
