  • 2 hot baked potatoes
  • 1 tblsp margarine
  • Dash pepper
  • 1tsp parsley flakes
  • 1/4 to 1/2 cup grated cheddar cheese

Preparation

Step 1

While hot, slice potatoes in half lengthwise and scoop out potatoe,leaving enough attached to the skins so theystand up.

Step 2

Mash potatoes with the rest of the ingredients and mix well. Refill the skins with the cheesy potatoe mix and bake at 350 degrees for 15 minutes

The potaties can be made up ahead then baked just before serving
