BANANA MAPLE PUDDING

Ingredients

  • ½ C. Maple syrup separated
  • ¼ C. Superfine sugar (blend normal sugar in silver bullet)
  • 1 ¼ C. Bananas mashed (approximately 2 large)
  • 6 tbs. Margarine melted and cooled
  • 2 Eggs
  • 1 C. Flour
  • 1 ¼ teas. Baking powder
  • 1/8 teas. Salt

Preparation

Step 1

Preheat oven to 350°

Step 2

Whisk HALF the syrup, sugar, bananas and margarine together

Step 3

Whish in eggs, flour, baking powder and salt

Step 4

Spoon into greased ramekins

Step 5

Bake approximately 25 minutes or until set

Step 6

Drizzle rest of syrup onto pudding

These baked Cheesy Eggplant Hedgehogs are totally adorable, tasty and really easy to make! 

 

Ingredients

  • 3 large eggplants
  • 1 cup olive oil
  • 1/4 cup chopped basil
  • 1 garlic clove, minced
  • Salt
  • Pepper
  • 4 cup shredded cheese


Method

  1. Mix the olive oil, chopped basil, garlic, salt and pepper in a bowl.
  2. Carefully slice the eggplant on it's side in a cross-hatch pattern, without cutting all the way through.
  3. Lay the eggplants inside an oven-safe baking tray.
  4. Pour the oil mixture over the eggplants, taking care to pour between the slices.
  5. Stuff the gaps in the eggplant with shredded cheese.
  6. Cook in the oven at 355°F for 45 minutes, until the flesh is cooked and the cheese totally melted.
  7. Serve and enjoy!
