Massala chai, also known as chai tea or a chai tea latte, is the beverage of choice in India. It's made using a blend of spices, called a massala, which is then infused in hot tea with lots of milk and sugar. The mixture of flavors and aromas makes it the ultimate comfort-drink.

Makes 4 mugs
For the massala (spice blend)
- 10 white peppercorns
- 8 green cardamom pods
- 1 cinnamon stick
- 1 teaspoon powdered (or fresh) ginger
- 1/4 teaspoon freshly grated nutmeg
For the tea
- 2 cups water
- 2 cups whole-fat milk
- 2 tablespoons sugar
- 2 black tea-bags or 2 tablespoons loose black tea
