If you love oatmeal raisin cookies, you'll love these muffins! Mix 1/2 cup oatmeal with 3/4 cup milk, 3 handfuls of raisins and set aside for 10 minutes. Add 2 eggs, 1/2 stick of melted butter, and mix well. Then add 1 1/2 cups flour, 2 teaspoons baking powder, 1/3 cup organic whole cane sugar, and mix just until the flour is no longer visible. Pour into a muffin tin filled with lightly greased muffin cups, then sprinkle the tops with oatmeal and a bit of brown sugar. Bake for 18 minutes at 350 °F. Enjoy!
