Inspired by a New Caledonian salad
- -1/2 head of white cabbage
- -1 ripe mango
- -soy sauce
- -olive oil
- -juice of one lime
- -a handful of fresh coriander, finely chopped
- -2 or 3 spring onions, finely chopped

place lime juice, fish sauce, sugar, pepper flakes and salt in large bowl and whisk until sugar dissolves
- 3 Tbsp lime juice
- 2 Tbsp fish sauce
- 2 Tbsp sugar
- 1 tsp red pepper flakes
- 1/4 tsp salt
- 2 large or 3 small mangoes peeled
- 1 red pepper
- 1/2 small red onion
- 1/2 cup finely chopped fresh mint
- 1 cup chopped fresh cilantro
- optional chicken breast sliced and cooked in 1 tsp sesame oil
