These fajitas are sweet and spicy. The raspberries add sweetness while the chipotle adds a smoky spiciness.

Ingredients

  • 3 portobello, sliced
  • 1 red bell pepper, julianne
  • 1 banana pepper, julianne
  • 1/2 sweet onion, sliced
  • 12 flour tortillas
  • MARINADE
  • 1 tbsp chipotle pepper, diced with sauce
  • 1 tsp garlic, minced
  • 1/4 cup cilantro, chopped
  • 2 tbsp lime juice
  • 1 tsp liquid smoke
  • 1 tbsp sesame oil
  • 1 tsp cumin
  • 2 tsp salt
  • 1 tsp pepper
  • SALSA
  • 1 cup frozen raspberries, thawed
  • 1 tbsp tequila
  • 1 tbsp lime juice
  • 1 tbsp red wine vinegar
  • 1 jalapeno, diced
  • 1 chipotle pepper, diced
  • 3 green onions, sliced
  • 1 tbsp cilantro, chopped
  • 1/4 cup brown sugar

Preparation

Step 1

Combine marinade. Pour marinade over vegetables. Refrigerate overnight.

Step 2

Combine salsa ingredients and boil until thickened.

Step 3

Grill vegetables in marinade.

Step 4

On a flour tortilla, place grilled vegetables and top with salsa. Roll into a burrito.
